For summer entertaining, I also enjoy a good rich dessert. They’re nice and refreshing, and they’ll last 3 to 5 days in the fridge. But there are times when I really want some pistachio pudding, and Pistachio Lush comes to the rescue. The layers of this creamy dessert are incredible, and they are completely delectable and fluffy in taste. A graham cracker layer is on the bottom, followed by a cream cheese layer, pistachio pudding layer, and Cool Whip layer.

INGREDIENTS
PISTACHIO LAYER:
3 cups milk
2 pkgs instant pistachio pudding
CRUST:
1 cup chopped walnuts
1 cup flour
1/2 cup stick butter (cut up)
CHEESE LAYER:
1 cup whipped topping
8 oz cream cheese at room temperature
1 cup confectioner’s sugar
TOPPING:
2 cups whipped topping
1/2 cup toasted almonds optional, but recommended
INSTRUCTIONS
Preheat the oven to 350 degrees Fahrenheit. Grease and line a 13×9 inch baking pan.
Combine the flour and chopped up butter in a large mixing basin. Cut the butter into the flour with a pastry blender or two knives until the mixture resembles small peas.
Add the walnuts and mix well.
Fill a 13 x 9-inch pan halfway with the mixture and press it down, firmly.
Bake for 20 minutes, or until the base seems to turn light brown.
Once it’s done. Remove from the oven and set aside to cool completely.
Cream together cream cheese, confectioners’ sugar, and 1 cup whipped topping until smooth and velvety. When it reaches the consistency, this should be spread over the cooled crust in the pan.
To make pistachio pudding, stir the pistachios into the milk thoroughly for 1-2 minutes, or until the pudding thickens.
Use a spoon, spread the pudding on top of the cheese layer.
Keep the cake chilled in the fridge for about 2-3 hours to let it set and harden.
If you want to, spread 2 cups of whipped cream on top of the cake, then sprinkle the toasted almonds to garnish and reach its best flavor.
